Move It to Lose It Healthy Recipe

Spaghetti Squash Pasta Recipe


1 Large Spaghetti Squash
1 Tablespoon Minced Garlic
1 Tablespoon Olive Oil
½ Pound of Lean Ground Turkey
3 Cups of Organic or All-natural Red Sauce (Try to find a low sodium option, if possible)

Heat the oven to 350 degrees.

Cut the spaghetti squash in half from top to bottom. Remove the seeds from the middle of the squash.

Lightly coat a baking pan with PAM or an anti-stick cooking spray. 

Place the two halves of the spaghetti squash, cut side down, on the baking pan. Place the baking pan in the oven for 30 minutes, or until the squash is tender and can easily be pierced.

While squash is baking, heat up a medium sized  skillet on high.

Place 1 tablespoon of olive oil and 1 tablespoon of minced garlic into the hot skillet.

Allow the ingredients in the skillet to heat for one minute and stir around the garlic with a spatula.

Place the ½ pound of ground turkey in the skillet, and begin to chop up the block of turkey with a spatula while it is cooking to break the pieces apart. Make sure that the turkey is thoroughly cooked.

Once the turkey is cooked, reduce heat of the skillet to low and add in the 3 cups of red sauce. Allow the meat to simmer in the sauce.

Once the spaghetti squash is tender, remove baking pan from the oven and allow the squash to cool.

When the squash is cool enough to handle, take a fork and begin scraping out the insides of the squash.

After all of the squash has been removed, place it in the skillet with the turkey sauce and mix together.

Add more or less sauce depending on the thickness you prefer. This recipe will yield two servings but can be doubled. I encourage you to make extra because this spaghetti squash pasta recipe tastes even better the next day, after the sauce and flavors have blended together and have seeped into the squash. With extra, you can have a healthy meal ready to take with you to the office!
