Raspberry Mini Muffin Recipe
4 tsp olive oil
2 cups egg whites
1 1/3 cup oatmeal or oat flour (flour creates more dough like consistency)
1 tsp cinnamon
1 tsp vanilla extract
1tsp baking powder
¾ cup raspberries
3 packets of Truvia (optional to sweeten)
Mixing and Cooking Instructions:
Preheat your oven to 350 degrees. In a medium bowl mix all ingredients together except for the raspberries. Spray a light coat of non stick spray on a 24 count mini muffin pan. Fill each section of the pan ¾ of the way with the mini muffin recipe mixture. Top each muffin with 1 or 2 raspberries. Let the mini muffins cook for about 13 minutes and immediately remove from the oven to cool.
