We admit… zucchini may not be the first thing you think of mixing with your oatmeal in the morning. Surprisingly, it tastes great. The zucchini is a “low carb” option to use as a filler for your morning oatmeal. This zucchini oatmeal recipe is perfect for the mornings that you have a huge appetite. The zucchini makes this meal high in volume and low in calories that will keep you satisfied for hours.

“ZOATS” Ingredients:

3/4 Cup Oats or 1/2 Cup Oat Bran
1 Cup Water
1/2-3/4 Cup Shredded Zucchini
3 Tbsp Egg Whites or One Egg White
1 Scoop Protein Powder

Toppings Optional: Berries, Fruit, Nuts, etc.

Zucchini Oatmeal Recipe Directions

Place zucchini in a food processor to shred. Once the zucchini is shredded, remove from  the food processor and place in a pot with oats or oat bran and water. Place on the stove and heat on medium high for 4-5 minutes(time depends on if you use quick oats, regular oats or oat bran). Add egg whites while stirring vigorously, to avoid the egg white from clumping together and cook for another 2-3 min.Turn of the heat and mix in your protein powder of choice. Allow to cool and top with your choice of fruit, berries, nuts etc.
