Looking for the perfect side dish for picnics or game day? Then check out this recipe provided by Celsius Success Story, Colleen Busch. Use some tortilla chips or crackers to scoop up this great tasting salsa. If you want to keep the fat and carbohydrates low, then simply eat this salsa as a side dish to your main meal.
1 Can drained and rinsed Black Eyed Peas
1 Can drained and rinsed Black Beans
1 Can drained diced, peeled tomatoes
1 Can drained whole kernel corn
1/2 Cup chopped onion
1/2 Cup chopped green pepper
1/2 Cup chopped red pepper
1/2 Cup chopped orange pepper
1 Tablespoon minced fresh garlic
1 Tablespoon dried parsley
1/2 Teaspoon black pepper
1 Teaspoon salt
1/4 Cup olive oil
3 Tablespoons Red wine vinegar
1 Fresh lime
1 – 4oz Canned Diced Jalapenos
and/or Fresh Chopped Cilantro
Add all ingredients in a large bowl – except the lime.
Mix gently to distribute evenly.
Cover and refrigerate overnight to let the flavors come together.
Squeeze fresh lime over top before serving.
Servings: ½ Cup
